Out- Of-This-World Corn Dip




Hello everyone~ hope you all had a safe and happy fourth of July! Ours was fantastic with the usual characters, swimming and fireworks. And…lot’s of yummy food! As promised, I’ll be sharing two of the wonderful party dip recipes I made.

Today is all about the corn! Out of this world corn dip that is…



3 cans Sweet corn with diced peppers drained *

1 can (7oz) Chopped green chiles drained

1 can (6oz) Chopped Jalapeño peppers drained *

1/2 cup Green onion chopped *

1 cup Mayonaise

1 cup Sour cream

1 teaspoon pepper

1/2 teaspoon garlic powder

16 oz sharp cheddar cheese shredded

Dipping Chips of your choice





In a large bowl, add 3 cans drained corn with peppers ( see notes below)




Add chopped chiles, green onion, and jalapeños



Add mayonnaise and sour cream



Stir to incorporate



Add dry seasonings and taste check for spice levels



Add your shredded cheese. Yes, all of it! Stir to incorporate



Cover and refrigerate for 2 hours to overnight!


Yep, that’s it! Out Of This World Corn Dip in 10 minutes! What are you going to do with all your free time? I’m going to go sit by the pool. 😉


Findings & Asterisks 

I stumbled upon this recipe quite by accident not looking for recipes at all. (more on where in a moment) It looked really good to me, but just wasn’t sure it was going to be “kid friendly” due to the onions and peppers, and since most of my parties and gatherings have lots of little ones…it ended up pinned to my pinterest board for over a year before I made it.

I have to tell you, I’ve made this a couple of times now and if you like corn THIS IS A KEEPER! The first time I made it the smallest of kids were not to keen on the amount of heat by the jalapeños. Everyone else? Let’s just say there wasn’t a kernel left.

This is a great party dip for ALL occasions and will definitely be the one everybody talks about. And it’s so quick and easy you could even have the kids make it up. With our lives so full and fast paced, we all need a quick go to party dish right?

Okay, so while surfing the net for a DIY project, I came across a wonderful site called Inspired By Charm. Michael, the man behind the blog has a little something for the DIY-er to interior design, entertaining and more. His site is beautifully done and his photography is breath taking. That is where I found this great recipe. He gives all the credit to Gooseberry Patch, and as did he, I will as well. But kudos to Michael for sharing and a wonderful website. On to the asterisks ***

I found it difficult to find the corn with diced peppers and I prefer fresh ingredients where possible, so I diced 1/3 cup fresh red bell pepper instead.

The full 7oz can of jalapeños makes the dip fairly spicy, so if you have children, I suggest cutting the amount in half. Or even better, use fresh. Start with one pepper diced very small, (remove seeds) and add as you go. It tastes fresher and seems less hot to me.

Personally, I think this dip has so many wonderful flavors I don’t think it needs the green onion, but try it both ways. Either way, it’s going to be a hit!
